Sunshine

Our friends just eloped! I would say that I was as surprised as everyone else, but I had a wee bit of a head’s up as I had the immense honor of making their wedding cake. This called for something beautiful but not over-the-top, classic but not boring. And since it was January, we really needed something just as sunny as the occasion. We brainstormed and settled on a candied pecan cake with pineapple curd between the layers and vanilla-rum buttercream frosting. Special though that flavor was, I thought it needed a little sparkle and flair: Enter pineapple flowers.
